Lemon, Garlic And Rosemary Roasted Chicken

  Garlic is a particularly effective antifungal ; both when applied topically and when taken internally. Here is another way to eat and enjoy your garlic with this tasty Lemon, garlic and rose Mary roasted chicken.

       Ingredients
-- A quarter pound  chicken
--- Four tablespoons chopped fresh rosemary
--- Three table spoons minced garlic
--- Two tablespoons extra Virgin olive oil
--- Two tablespoons lemon juice (used a Meyer lemon)
--- Zest of one lemon (used a Meyer lemon) roughly chopped

--- One tablespoons hot smoked paprika
--- Salt and freshly ground black pepper
--- Two lemons cut into slices
                  
                                                       Preparation 
  Step 1 :
Preheat the oven to 450°F.
Step 2 :
Mix the garlic, olive oil, lemon juice, lemon Zest, paprika, and salt and pepper in a bowl.
Step 3:
Rub the rosemary, garlic mixture all over the chicken, including the breast, thighs and under the skin. Place the lemon slices, backbone and giblets on a heavy duty rimmed baking sheet. Set a wire rack over the baking sheet and place the chicken on top, breast side up.
Step 4:
Roast the chicken In the oven for over 50 minutes or until your thermometer reads 165°F in the thickest part of the thigh (without touching the bone) and the skin is nice and golden brown and crispy.

Finally let it cool down for about 10 to 15 Minutes and enjoy.
